Principles of Lacto-Fermentation Guide for Gardeners

Lacto-fermentation is an ancient, biological method of food preservation that relies on beneficial lactic acid bacteria (principally Leuconostoc mesenteroides, Lactobacillus plantarum, and Pediococcus species) naturally present on the surfaces of fresh vegetables. When vegetables are submerged in an anaerobic (oxygen-free) environment with an exact concentration of salt, these bacteria convert natural plant sugars into lactic acid.

The resulting drop in pH (typically down to 3.5–4.2) creates an environment hostile to pathogenic and spoilage organisms, including Clostridium botulinum, while creating crisp textures, tart flavors, and probiotic complexity.

Critical Fermentation Safety Note

Home lacto-ferments are live-culture foods that must be moved to cold refrigerator storage (below 40°F / 4.4°C) once active fermentation completes. They require continuous cold refrigeration and must never be sealed in airtight containers without proper gas venting during active fermentation.

Precise Salinity Control

Salt inhibits unwanted mold and proteolytic bacteria while permitting salt-tolerant lactic acid bacteria to thrive. Standard dry salting uses 2.0%–2.5% salt by total vegetable weight; wet brines use 3.5%–5.0% salinity.

Strict Anaerobic Environment

Lactic acid bacteria are facultative anaerobes. Keeping vegetables submerged below the brine level with weights and using one-way airlocks prevents surface mold and Kahm yeast.

Temperature Management

Optimal fermentation occurs between 65°F and 72°F (18°C–22°C). Temperatures above 75°F cause rapid, mushy ferments; below 60°F fermentation slows significantly.
