Dehydration is one of the oldest methods of food preservation. By removing water (reducing moisture content to below 10% for vegetables and below 20% for fruits), bacteria, yeasts, and molds cannot survive or reproduce, and enzymatic reactions are drastically suppressed.

Unlike uncontrolled outdoor sun drying, modern home food preservation uses electric dehydrators with precise thermostat controls and horizontal fan circulation to dry food quickly and safely before spoilage can take hold.

Thermostat Control & Case Hardening

Drying at excessive temperatures (above 145°F) causes "case hardening," where the outer surface hardens into a leathery skin that traps moisture inside, causing internal mold.

The Mandatory Conditioning Step

Because pieces dry at slightly uneven rates, all dried fruit and vegetables must be conditioned in airtight glass jars for 7–10 days with daily shaking to equalize residual moisture.

Moisture-Proof Dark Storage

Dried foods are hygroscopic (they absorb ambient humidity from the air). Store in airtight glass jars or Mylar bags with oxygen absorbers in a cool (50°F–60°F), dark pantry.
